The grapes, de-stemmed, after the addition of selected yeasts are put to ferment in stainless steel tanks; the floating hat created by the skins is kept continuously wet. At the end of fermentation, after 7- 8 days, continue spraying the skins for another 8-10 days, in order to extract all the useful substances.
Part in steel and a minor part in wood.
Organoleptic Qualities
View - intense dark red with violet reflections.
Nose - fruity, with hints of plum, blackberry and black cherry jam.
Taste - full, harmonious with long persistence.
