Organoleptic Qualities
Sight - pale yellow with golden shades and greenish reflections.
Smell - fresh, floral and pleasantly fruity. With perceptible hints of sage, acacia and exotic fruit.
Taste - the particular acid and mineral structure makes it very fresh, nice and balanced. After-smell enriched by balsamic notes.
Pairings suggestions
Ideal with all fish-based dishes: shellfish, raw fish; it is also excellent with appetizers, delicate first and second courses, white meats.
