The hand-picked bunches are traditionally vinified with a long maceration of the skins with a submerged cap and at a controlled temperature. After racking after malolactic fermentation, the wine decants in stainless steel tanks.
In large barrels and barriques.
Organoleptic Qualities
Sight - deep ruby red with light violet reflections.
Smell - complex and intense, with hints of black cherry, plum and blackberries.
Taste - full-bodied and round, with a notable charge and soft tannins, with a persistent and pleasant finish.
Pairings suggestions
First courses based on succulent sauces, legume soups, roasts and grilled meats. Excellent with medium-long-aged cheeses.
