Vinification
Classic method obtained with only Chardonnay grapes and aged on the lees for a minimum of three years; the long aging gives harmony, softness and elegance, safeguarding the typical finesse and freshness of the grape.
Ageing
At least 36 months on the lees.
Organoleptic Qualities
Sight - Straw yellow color with golden reflections; extremely fine and persistent perlage.
Smell - Fine and intense aroma with hints of hawthorn, notes of apple, hazelnut and dried fruit crowned by a light crust of bread.
Flavor - of fine harmony and complexity. It is fully expressed with sensations of freshness and vivacity, in a wise balance between softness and measured acidity; great finesse in the velvety and persistent finish. Citrus aftertaste.
Pairings suggestions
Throughout the meal, preference for molluscs, crustaceans, fish and risottos. Unequaled as an aperitif accompanied by cheeses and cold cuts. Excellent as a continuation of the evening.
